My In-Season item pick of the month: Mangoes!


What to look for when purchasing mangoes?
Soft fruity aroma
Ripened = orange, reddish, yellow colors
Unripe = no scent, green
Gives slightly to the tough
Not too soft or mushy
No bruising

Bounce into Spring with this light and refreshing mango-yogurt parfait:



Mango-Yogurt Parfait

2 large ripe mangoes, diced and pureed
2 (6 oz) containers vanilla yogurt
1/4 cup granola (more if you like)
diced mango for garnish

Make sure you are using fresh, ripe mangoes because when they ripen, they get sweeter. Peel the mangoes and dice the flesh. If you are not sure of how to do this, here is my post on How To Cut a Mango. Puree them in a blender or processor until smooth. 

Stir your vanilla yogurt until smooth. Layer flutes or goblet glasses with mango puree, yogurt and granola. Repeat with puree and yogurt, then top with diced mangoes and granola for garnish.
